McCombs Supply's Thanksgiving Appetizers 

After you finish watching the  Macy's Thanksgiving Day Parade, the National Dog Show presented by Purina (featuring the great voice of John O'Hurley) and begin watching the first football game of the day (Minnesota Vikings at Detroit Lions), it is time to start eating. 

Before the main course of turkey and stuffing comes out, how about some Thanksgiving appetizers.

Creamy Crab and Bacon Phyllo Cups

Let these creamy, crab-filled beauties take your holiday spread from basic buffet to cocktail soirée!

Ingredients

packages (1.9 oz each) phyllo cups (30 shells total)

2

slices bacon, coarsely chopped SAVE $

1/2

cup finely chopped white mushrooms

1/2

cup finely chopped sweet onion SAVE $

1/2

cup Progresso™ chicken broth (from 32-oz carton) SAVE $

1

can (6 oz) lump crabmeat, drained and picked over

4

oz cream cheese (from 8-oz package), softened

2

cups chopped baby spinach

1/2

cup shredded Parmesan cheese

1

teaspoon lemon juice

1

tablespoon finely chopped thyme leaves

    Crisp phyllo cups as directed on package.

    In 10-inch skillet, cook bacon over medium heat 4 to 5 minutes or until crisp. Remove with slotted spoon; drain on paper towel-lined plate. Add mushrooms and onion to drippings in skillet; cook 3 to 4 minutes, stirring occasionally, until mushrooms and onion are soft and skillet is nearly dry.

    Add broth; cook 4 to 6 minutes or until most of liquid is absorbed. Add crabmeat and cream cheese; stir 1 to 2 minutes or until cream cheese melts. Stir in spinach until wilted and mixture is heated through. Stir Parmesan cheese into mixture; remove from heat, and stir in lemon juice.

    Scoop rounded teaspoons crab filling into phyllo cups; top with bacon and thyme.

Stuffed Sweet Peppers

These stuffed sweet peppers will become your new go-to-appetizer! Filled with flavorful cheese and topped with bread crumbs, you won’t believe how easy they are to put together

Ingredients

mini sweet peppers (red, yellow and orange)

1

package (5.2 oz) Boursin™ cheese with garlic and fine herbs, softened

4

oz (from 8-oz package) cream cheese, softened

1/8

teaspoon ground red pepper (cayenne)

cup Progresso™ plain panko crispy bread crumbs SAVE $

tablespoons butter, melted

1/8

teaspoon black pepper

1/2

cup finely shredded Parmesan cheese (2 oz)

2

tablespoons chopped fresh chives

Steps

    Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray.

    Cut each sweet pepper in half lengthwise, leaving stems intact. Remove seeds and membranes. Place halved sweet peppers on pan, cut sides up.

    In small bowl, mix Boursin™ cheese, cream cheese and ground red pepper with spoon until well blended. Place cheese mixture in small resealable food-storage plastic bag. Cut 1/2 inch off 1 corner of bag. Pipe mixture evenly among pepper halves, about 2 teaspoons for each pepper.

    In another small bowl, mix bread crumbs, melted butter and pepper. Sprinkle each pepper half with about 1/2 teaspoon bread crumb mixture; gently press into cheese mixture.

    Bake 15 minutes. Remove from oven, and sprinkle about 1/2 teaspoon Parmesan cheese on each pepper. Return to oven; bake 5 to 8 minutes or until tops are brown and cheese is melted. Let stand 10 minutes before serving. Top with chives. Serve warm.

ADVICE

  • Using a small serrated knife for cutting the peppers allows you to easily cut the stem in half.
  • Increase the ground red pepper in the filling for even more of a kick!
