A Fun, Easy Dessert

If you are like me, mother makes the Thanksgiving meal and she tells us to bring a dessert. So over the years I've looked for some quick and easy (and tasty) treats.

I stumbled on Pillsbury's website a few years back and saw they had two of my favorite desserts listed. The one is for maple-pumpkin cinnamon roll slab pie (my wife is not a fan of maple, so this is a dessert for my son and I) and the other is for 2-ingredient apple pie cups.

I love that it is only two indredients. This is a dessert I can make with my 8-year-old son.

Maple-Pumpkin Cinnamon Roll Slab Pie

Ingredients 

2 cans (12.4 oz each) Pillsbury™ refrigerated cinnamon rolls with icing 

3 eggs, slightly beaten 

1/4 cup sugar

1 tablespoon pumpkin pie spice

2 1/4 cups canned pumpkin (not pumpkin pie mix) (from two 15-oz cans)

1 1/2 cups heavy whipping cream

3/4 cup real maple syrup

Topping

1 1/2 cups heavy whipping cream

1 teaspoon maple extract

1/2 cup chopped toasted pecans

Directions

  • 1 Heat oven to 375°F. Spray 18x13-inch rimmed sheet pan with cooking spray.
  • 2 Separate each can of dough into 8 rolls; cover and refrigerate icing for later. Cut each roll in half crosswise to make two thin rolls. Place rolls in single layer in pan; let stand 10 minutes. Pat and press rolls to stretch and completely cover bottom and slightly up sides of pan.


    3 In large bowl, mix eggs, sugar, pie spice, pumpkin, 1 1/2 cups whipping cream and the maple syrup with whisk to blend well. Pour and carefully spread filling over cinnamon roll crust.

    • 4 Bake 33 to 38 minutes or until edges are deep golden brown and center is set. Cool completely in pan on cooling rack, about 1 hour. Refrigerate 1 hour before cutting and serving.

    • 5 In chilled large bowl, beat 1 1/2 cups whipping cream and the maple extract with electric mixer on high speed until soft peaks form. Beat in reserved icing until blended. Serve pie with whipped topping and pecans.

    • Tips

    • Store pie loosely covered in refrigerator.
    • Cinnamon rolls will be easier to press out if dough stands for 10 minutes.

2-Ingredient Apple Pie Cups

This is what I like. Quick and easy. 
This recipe was a big hit with my family. I read on the Pillsbury site that cook/bakers have tried changing up the filling and making mini peach pies, cherry pies and blueberry pies.

Yes, you can make tasty apple pie cups with just two ingredients.

All you need are a can of Pillsbury refrigerated cinnamon rolls and apple pie filling. 

Ingredients

1 can (13 oz) Pillsbury™ refrigerated flaky cinnamon rolls with buttercream icing SAVE $

1 1/3 cups more fruit apple pie filling (from 21-oz can), coarsely chopped 

Directions

  • 1 Heat oven to 375°F. 
  • Spray 8 regular-size muffin cups with cooking spray. Set icing aside. Separate dough into 8 rolls.
    Press into and up sides of muffin cups.

2 Spoon 2 generous tablespoons pie filling into each dough-lined cup.

  • 3 Bake 14 to 18 minutes or until golden brown; cool in pan 5 minutes.
  • 4 Transfer icing to small microwavable bowl. Microwave uncovered on Low (10%) 8 to 10 seconds or until thin enough to drizzle. Place rolls on serving plate; spoon icing over rolls. Serve warm until thin enough to drizzle. Place rolls on serving plate; spoon icing over rolls. Serve warm.

    Tips

    • Use a nonstick muffin pan for easiest removal.
    • Use leftover apple pie filling as a topping over vanilla ice cream.

      Prep for this recipe only takes about 10 minutes—(Ok, my wife helped or it would be a little longer).
    • press cinnamon rolls into a muffin pan and scoop some apple pie filling into each cup and bake.
      Don’t forget that cinnamon roll frosting drizzle at the end.
