Canning Season Begins

The urge to preserve strikes me in force.

This is my favorite time of year. We just had Summer Solstice - the longest day of the year- and summer is officially here. 

This means is it canning season. Canning season depends on what part of the country you live in, i.e. climate where you live. I suppose the "offseason" is usually winter and spring, but canning "season" is when a lot of harvesting of a garden is being done from early to late summer and early fall. It all depends on what is plentiful and cheap, or is available.

Place like California can grown nearly year-round. 

There are California grown tree fruits: apricots, nectarines, peaches, plums, apriums, pluots, almonds, and various citrus.

Even if your stove is approved for water bath canning, you can NOT use the type of canner that has a rippled bottom. 

The ripples cause heat loss and you can't reach a steady temperature. Instead, you must use a flat bottomed canner or a tall stock pot with a rack inside to hold jars up off the bottom.

 Getting Started

There are two home canning methods: water bath canning and pressure canning. Understanding the components and difference between the two processes will help you choose the method best for the foods you want to preserve.

Water Bath Canning

A lower temperature canning process, water bath canning is ideal for high acid foods and recipes that incorporate the correct measure of acid. The combination of time and temperature destroys mold, yeast and enzymes that cause spoilage while creating a vacuum seal. This process is recommended for produce and recipes including:

Fruits and fruit juices

Jams and jellies

Salsa

Tomatoes

Pickles and relishes

Pressure Canning

Pressure canning is the only processing method that reaches the high temperature (240°F) needed to safely preserve low acid foods. This process destroys foodborne bacteria and prevents spoilage. This process preserves foods a like:

Meats

Poultry

Salsa

Vegetables

Chili

Seafood
